It’s no secret that us Canadians are known for our maple syrup, and I’m not going to lie, that’s a badge I’m happy to wear with pride. I’m like buddy the elf when it comes to the stuff – no dish is safe from me and my maple ways. But with Thanksgiving coming up for so many of you, I thought I’d share my very favourite way to use the delectable ingredient. These maple glazed carrots are hands down my favourite, and I highly recommend a double batch if you do try them.

Ingredients
  1. 1 1/2 lbs carrots
  2. 1 tbsp olive oil
  3. 2 tbsp butter
  4. 2 tbsp maple syrup
  5. 2 tsp fresh rosemary, finely chopped
  6. 1 small clove garlic, finely chopped
  7. Sea salt & pepper to taste
Instructions
  1. Preheat the oven to 400°F.
  2. In a small bowl, mix olive oil, garlic, and a pinch of salt.
  3. Wash the carrots, then toss them in olive oil mixture until fully coated and place in a single layer in a baking sheet or pan.
  4. Roast in the oven for 30-35 minutes, until carrots are tender.
  5. In a small saucepan, melt the butter over medium-low heat. Add maple syrup, salt, pepper, and chopped rosemary and mix together.
  6. Pour the maple glaze over the carrots and lightly toss the carrots until they are coated.
  7. Garnish with rosemary sprigs and serve!
