Toasted Coconut + Banana Smoothie

Though I may not always succeed, I really do try to not sit here and complain about the weather. I’m usually the type to try to find the silver lining in anything and everything I’m handed. It’s cold out? Let’s build a blanket nest and watch movies! Rainy? A cup of tea is just the ticket. But this year, winter has been brutal. Brutal! And there’s only so many blanket nests one can build! So this week I’m attempting another tactic: summer in a glass via this toasted coconut smoothie. If we can’t soak up the sun, perhaps maybe we can drink it? Note to winter: take a hint!

Ingredients
  1. 1/2 cup sweetened coconut flakes
  2. 2-3 frozen, ripe bananas (if unfrozen, just add more ice)
  3. 1/2 cup ice cubes
  4. 1/2 cup light coconut milk
  5. 2-3 tbsp. vanilla greek yogurt
  6. 1/2 tsp. cinnamon
  7. 1/2 tsp. vanilla
Instructions
  1. 1. Place your coconut flakes on a baking sheet and bake for 2-5 minutes at 350 degrees. Keep an eye on it as it will burn in a flash.
  2. 2. Add everything to your blender and blend until smooth
  3. 3. Pour into 1 large glass or two small (only if you feel like sharing)
  4. 4. Top with a spoonful of reserved coconut flakes, if desired
