It may be considered strange that I make myself cupcakes for my birthday party, but I feel like ones birthday is not complete without them. Just the other weekend, we had a number of friends over to celebrate said day. While waiting for them to arrive, my girlfriend and I whipped up these vanilla almond cupcakes with maple cream cheese icing using this recipe. It may be a bold statement, but I think it’s safe to say that they’re one of my favourite cupcakes to date (and judging by how quickly they disappeared I don’t think I’m alone here). I love the classic simplicity of a vanilla cupcake, yet the almond and maple flavours gives it a little something unexpected. I have gladly added this recipe to my official keep pile.
