Clearly I’m not QUITE done with summer yet. And why should I be when the weather has finally started to oblige (where were you all summer, warmth? I ask you this!) Fresh peaches are still abundant for a few more weeks, and if you make anything this September, these peaches and cream popsicles should be it. They’re so delicious I almost didn’t even want to tell Justin I made them. It’s alright though. He learnt years ago that sharing food is not my strong suit.

Ingredients
  1. 1/2 cup sugar
  2. 1/2 cup water
  3. 1 tsp. vanilla extract
  4. 4 cups (around 4 medium) ripe peaches, peeled and sliced
  5. 1/2 cup whipping cream, chilled
  6. 1/4 cup vanilla greek yogurt
Instructions
  1. In a medium saucepan over medium heat, add sugar, water, vanilla and sliced peaches. Bring to a boil and let boil for 5 minutes. Remove from heat, let cool.
  2. Once cool, place in food processor and pulse until pureed. Pour through a fine sieve to remove any pulp.
  3. Mix in whipping cream and greek yogurt.
  4. Distribute evenly into 10 popsicle molds and freeze 3-4 hours, until solid.
