The weather around here lately has been nothing short of glorious. The sun is shining, the birds – chirping, and I swear most everyone I know has had just the slightest pep in their step. Rose season is here, my friends, and I’m going to be all sorts of unapologetic about it. My current favourite way to take in the seasonal bevvy of choice? A strawberry rose cocktail, of course. It’s the perfect warm weather sipper, and I guarantee will please even the pickiest of cocktail connoiseurs. With photos from Ruth Eileen Photography, grab the recipe below!

Ingredients
  1. 1 pint fresh strawberries
  2. 1 bottle Rosé wine
  3. 1 cup sugar
Instructions
  1. Thinly slice 2-3 strawberries and scatter slices throughout an empty ice cube tray.
  2. Fill ice cube tray with Rosé and place in the freezer overnight.
  3. Slice 4 medium strawberries and place in a small saucepan, along with 1 cup sugar and 1 cup water.
  4. Bring sugar mixture to a boil until sugar is completely dissolved. Pour through a mesh strainer into a small bowl so the strawberry bits are removed. Place the bowl of simple syrup in the refrigerator to cool.
  5. Chill cocktail glasses in the freezer for 20 minutes before preparing cocktail.
  6. Thinly slice 2-3 strawberries and place into a pitcher. Pour 1/2 cup of simple syrup into pitcher and fill with Rosé. Stir thoroughly.
  7. Take the cocktail glasses out of the freezer and place 2-3 Rosé ice cubes in each glass. Pour cocktail over ice cubes and serve immediately.
