Baked Brie with Wine Soaked Berries

For the last two years in a row, I’ve come down with a nasty bug come Christmas, and have been bedridden for New Years each time. Since launching my business, I’ve been working constantly to uncover that elusive work-life balance thing everyone goes on about, and while I’ve yet to discover the secret, it’s my mission to not overdo it this December. This year I’m determined to celebrate the season in every way possible, but I’m going easy on myself, and placing focus on what really matters. I’m asking for help when needed, hosting the simplest holiday party EVER (more on that next week), and making sure I have all the ingredients on hand for a few beyond simple, yet equally delicious, holiday recipes to serve my people. And this one, for a baked brie with wine soaked berries, is all that and then some.

Ingredients
  1. 1 (8 oz.) round brie
  2. 6 oz. fresh blackberries
  3. ½ c. red wine
  4. 2 Tbsp. sugar
  5. 1 baguette, sliced
Instructions
  1. Mix sugar into red wine until disolved
  2. Add blackberries and let soak for 30 minutes, or overnight
  3. In the meantime, preheat your oven to 350ºF. Bake your brie on a parchment lined baking sheet for 10-12 minutes
  4. Top with wine soaked berries and serve hot with a sliced baguette

  1. A warm brie is one of our favorites. We buy the brie that comes in a thin wooden container. Take off the inner plastic wrap, put the brie back in the wooden box, and set on the edge of the grill after you’ve cooked your dinner. While you’re eating, it heats, and is nice and gooey just in time for the cheese course. I haven’t done it in the oven, but I would guess that it would work fine. The wooden container creates a kind of bowl for the melted cheese once you’ve cut into the rind.

  5. This looks so yummy! I’ve tried baked Brie before and it came our sort of mediocre? It wasn’t creamy and melty like this one. This has all my favorite things! I’m trying this
