Apple Almond Muffins

A few weekends ago we headed to the apple orchard to stock up on this year’s bounty. We may have been a little overzealous as we returned home with way more than our fair share of fall fruit. It’s been a veritable bakefest over here as I’ve tried my hand at everything I could think of involving apples as not to waste the precious pickings. Apple raspberry fritters, apple cinnamon sauce, apple crisp – we’ve done it all. But the winner by far? These simple apple almond muffins.

Ingredients
  1. 1⁄2 cup almond flour
  2. 1 cup all-purpose whole wheat flour
  3. 1⁄2 cup granulated sugar
  4. 2 tsp. baking powder
  5. 1⁄4 tsp. salt
  6. 2 tsp. ground cinnamon
  7. 1⁄2 tsp. ground cardamom
  8. 1/2 tsp. ground nutmeg
  9. 1⁄2 cup milk
  10. 1 large egg
  11. 1⁄3 cup applesauce
  12. 1 medium apple, finely chopped
  13. 1⁄3 cup almonds, finely chopped
  14. 1 medium apple, sliced thinly
Instructions
  1. Preheat oven to 350. Grease or line your muffin tin.
  2. In a medium bowl, whisk together your flours, sugar, baking powder, salt, and spices.
  3. In a small bowl, whisk together the milk and egg - add the applesauce and mix to combine.
  4. Pour the wet ingredients into the dry, add the chopped apples, nuts and stir to combine.
  5. Fill muffin tins 3/4 of the way full. Top with a sliced apple and bake for 20-25 until golden brown and cooked through.
