Vanilla honey spiced cookies recipe

Warm vanilla honey cookies stuffed with sugar and spice and everything nice… surely that qualifies as heaven. And if that doesn’t do it for you, the scent of these bad boys wafting through your home as they bake most certainly will. I stumbled upon this recipe for vanilla honey cookies over on Mary’s food blog during a particularly stressful day last week, and as luck would have it, I had all of the ingredients on hand. You see, baking is kind of my meditation, and while this can be dangerous for one’s waistline, whipping together butter and sugar tends to work for me every time. And while testing out new recipes on a whim doesn’t always yield great results, this one right here is most definitely for keeps.

Ingredients
  1. 1¾ cup flour
  2. 2 tsp cornstarch
  3. 1 tsp baking soda
  4. ½ tsp salt
  5. 1 tsp cinnamon
  6. ¼ tsp ground ginger
  7. ¼ tsp nutmeg
  8. ¼ tsp all-spice
  9. ⅛ tsp ground cloves
  10. ¼ tsp black pepper
  11. ½ cup unsalted butter, room temperature
  12. 1 cup brown sugar, packed
  13. 1 egg
  14. 2 Tbsp vanilla extract
  15. 2 Tbsp honey
  16. ¼ cup powdered sugar
  17. 1 Tbsp milk
Instructions
  1. Preheat the oven to 350 F. In a medium bowl combine flour, constarch, baking soda, salt, pepper and spices.
  2. In the bowl of your stand mixer, cream together the butter and sugar until light and fluffy (5-7 minutes)
  3. Add the egg, vanilla and honey and mix until incorporated.
  4. Pour in the flour mixture and stir until just combined.
  5. Place pingpong ball sized balls of batter on parchment-lined baking sheet, spaced 2" apart, and bake for 10 minutes.
  6. Let cool for a few minutes on the baking sheet, and then transfer them to a wire rack to cool completely.
  7. While cooling, mix together the powdered sugar and milk and drizzle over cooled cookies
