Thyme & Plum Champagne Cocktail

plum thyme champagne cocktailSome time ago I attended the sweetest shower for a good friend, and while every single detail was on point, they were serving a thyme and plum champagne cocktail that totally stole the show. I made the mistake of not asking for the recipe, and I’ve been pulling a Monica Gellar in an attempt to recreate it myself ever since. I’m thrilled to announce that I’ve come incredibly close to perfecting it, and would be doing you all a disservice if I didn’t share. A thyme simple syrup with muddled plums sets the stage, while a heavy hand of prosecco seals the deal.
