Bruléed Grapefruit & Ginger Spritz

I recently got my hands on a Bonne O sparkling beverage system, and I’ve been a bit of a madwoman sparkling ALL OF THE THINGS ever since. You legitimately toss whatever your heart desires into the bottle, push a button, and bam – infused sparkling beverage. I’ve attempted everything from lemon slices and water as I wake, to elaborate iced teas, to strawberry-basil lemonades, and then some. But my favourite concoction to date? This bruléed grapefruit and ginger sipper. Made with or without alcohol, pending your preference – or time of day – it’s just a little more elaborate than your typical drink, but oh my god the results are so worth the effort. It’s one of those beverages you’d whip up for a holiday party when your neighbor whose kids are always well groomed and whose husband is a total hunk and whose grass is ALWAYS manicured (what’s up with that?) is coming over for dinner, and you’re truly looking to impress.

Ingredients
  1. FOR THE GINGER THYME SIMPLE SYRUP
  2. 2 oz. fresh ginger, sliced
  3. 5-6 sprigs of fresh thyme
  4. 1 cup white sugar
  5. 1 1/2 cup water
  6. FOR THE BRULÉED GRAPEFRUIT
  7. 1 grapefruit
  8. 1/2 Tbsp. white sugar
  9. 2 Tbsp. brown sugar
  10. FOR THE COCKTAIL
  11. Ginger-thyme simple syrup
  12. Juice of 1/2 of the bruléed grapefruit
  13. Remaining 1/2 of bruléed grapefruit, chopped into 1" slices
  14. 5-6 thyme sprigs
  15. 3 oz. gin or vodka (optional)
  16. Cold water
  17. Bonne-O Sparkling Beverage System
Instructions
  1. FOR THE GINGER THYME SIMPLE SYRUP
  2. Place all ingredients in a saucepan, stir over medium heat until sugar is dissolved. Set aside and let steep until cooled. Once cooled, strain through strainer and reserve juices.
  3. FOR THE BRULÉED GRAPEFRUIT
  4. Cut grapefruit in half and place fruit-side-up on a parchment lined baking sheet. Mix together sugars and divide evenly on top of each grapefruit.
  5. Broil on high for 10 minutes, until sugar dissolves and caramelizes. Let cool completely.
  6. TO ASSEMBLE
  7. Add 2 oz. simple syrup, the juice of 1/2 the bruléed grapefruit, the remaining half of the grapefruit (chopped), thyme sprigs, and alcohol (optional).
  8. Fill your Bonne-O bottle to the very top with cold water and follow manufacturers instructions to carbonate your cocktail.
  9. Pour into low-ball glasses, top with a sprig of thyme and enjoy!
