Can you even handle the cute? I mean seriously though. I’m well aware that I’m currently void of children, but that never has (and never will!) stop me from making adorably themed desserts. These Easter bunny tails (which are essentially just donut holes covered in chocolate and shredded coconut) make for the most perfect Easter treat. They’re cute, ridiculously simple and beyond delicious!

Ingredients
  1. 5 cups vegetable oil (for frying)
  2. 1 cup milk
  3. 1 large egg
  4. 2 cups all-purpose flour
  5. 2 Tbsp. sugar
  6. 4 1/2 tsp baking powder
  7. 1/2 tsp. salt
  8. 1/4 cup unsalted butter, melted
  9. 6 oz. good quality white chocolate
  10. 3/4 cup shredded coconut
Instructions
  1. Pour a minimum of 2" oil into the bottom of a pot. Heat the oil until it reaches 350 degrees.
  2. In a small bowl, whisk together milk & egg
  3. In a separate bowl, whisk together the flour, sugar, baking powder and salt.
  4. Stir the milk mixture into the dry flour mixture
  5. Then stir in the melted butter until dough begins to form.
  6. Once oil has reached the proper temperature, use a small ice cream scoop to drop 1 tbsp. of the dough into the hot oil. Repeat until you have a handful of donut holes frying at once (but be careful not to overcrowd the pot).
  7. Gently flip the donut holes until golden (about 2 minutes). Transfer to a baking sheet lined with paper towel to let cool.
  8. In the meantime, melt your chocolate.
  9. Once donut holes are cooled, roll them in the melted chocolate and then immediately into the shredded coconut.
  10. Repeat with remaining holes and refrigerate until hardened.
  11. Enjoy!
Notes
  1. If you want to save time, simply purchase donut holes at your local bakery, dip in chocolate, roll in coconut and enjoy! I won't tell.
