Glazed Donut Muffins

Will you guys judge me if I tell you I don’t like donuts? Before you do, you should know that my best friend doesn’t like cheesecake (I know. I questioned our friendship for a while there). But really, they’re just not my thing. Transfer that cinnamon-y, nutmeg-y batter into a muffin tin, on the other hand, and you’ve got me sold! And though these guys could technically be considered cupcakes, what with all the sugar involved, if you call them muffins you get to eat them for breakfast (win). These babies are all sorts of delicious and I call this one a slam dunk.

Ingredients
  1. FOR THE MUFFINS
  2. 3 cups flour
  3. 2 1/2 tsp baking powder
  4. 1/4 tsp baking soda
  5. 3/4 tsp salt
  6. 1 1/4 tsp ground cinnamon
  7. 1/2 tsp ground nutmeg
  8. 1 cup milk
  9. 10 tb butter, softened
  10. 1 cup granulated sugar
  11. 2 large eggs
  12. 1 tsp vanilla extract
FOR THE GLAZE
  1. 3/4 cup powdered sugar
  2. 1.5 Tbsp milk
  3. 1/2 tsp vanilla
Instructions
  1. Preheat your oven to 400 degrees F.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon & nutmeg.
  3. In a large mixing bowl, beat together butter and sugar.
  4. Add eggs, one at a time.
  5. Add vanilla
  6. Using a wooden spoon, add flour mixture and milk in three parts, alternating between each.
  7. Using an ice cream scoop, divide batter amongst lined muffin cups, filling 3/4 full.
  8. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
  9. Transfer to wire rack and cool.
FOR THE GLAZE
  1. While muffins are cooling, mix together glaze ingredients.
  2. Dip cooled muffin tops into the glaze, rotating to coat.
  3. Let dry & enjoy!
