
I’m thrilled to have been a contributor in this months Xquisit Magazine sharing one of my favourite fall recipes: goat cheese stuffed beet ravioli in a brown butter shallot sauce. Definitely not low-cal – but really delicious, and bright pink! It doesn’t get much better than that. You can find the recipe on page 68 here.

I have actually never had a beet–they always intimidate me! Beets in ravioli form seem like a good place to start, these look delicious!
