Coffee Ice Cream

Much like my discovery with popcorn and bread, I’ve recently discovered that you don’t require a specific machine (I’m looking at you ice cream maker) to make one of my favourite frozen treats. I’m telling you, minds are being blown in my kitchen on the daily. It turns out, all you need are a few key ingredients, a freezer, and a little bit of patience (waiting is truly the hardest part). I found this particular recipe in one of my newest cookbooks, and I can confidently say that it’s AMAZING. I would even go so far as to announce that the results taste almost entirely like Haagen Daz coffee ice cream. I know. Right?  If you haven’t already run out to the store to buy a litre of heavy cream, I’m not sure we can continue this friendship. That’s how serious I am about this recipe.


::what you’ll need::
.6 egg yolks
.1 cup strong coffee
.1 cup sugar
.2 cups cream

::what you’ll do::
.Beat the yolks and sugar into a white foam
.Add the coffe and 1/3 of the cream. Stir well into a smooth sauce
.Pour the sauce into a saucepan and bring to a boil while stirring
.Keep stirring gently until the sauce starts to thicken and sticks to the back of the spoon (you now have custard!)
.Leave the custard to cool
.In the meantime, whip the rest of the cream
.Gently fold the custard into the remaining cream
.Line a loaf pan with plastic wrap
.Pour the mixture into the pan and cover
.Freeze for at least 5 hours
