
While you’d never guess based on my list of recipes I’ve conjured up on this here blog thus far, I do try my best to reach for healthier alternatives on a regular basis. Admittedly, it’s not always easy when cheese filled pastas and thick juicy steaks are there for the taking, but recipes like this one definitely help. The combination of pearl barley, peas and shrimp with just a hint of lemon will have you convinced from the first bite. Pair this dish with a glass of riesling on your back porch (or condo balcony if you’re anything like us) and you’ve got yourself a superb summer meal.

This looks so good! I really prefer using barley for risotto instead of rice and I try to make barley risotto at least once or twice a month. However, I’ve never made it with shrimp before and this looks absolutely delicious! Also, your blog is just lovely!

I’ve made something similar, but with edamame and prosciutto. I also have a recipe for squid ink risotto written down somewhere, if you’re ever feeling adventurous it’s def sthing to try!
