For whatever reason the thought of cooking chicken pot pie was a daunting task. I imagined it to be fussy, time consuming and I had never really considered attempting it myself as a result. When I found this recipe I established that it was potentially something that I could handle. I was shocked at how quick, easy (and delicious!) it was, and it made the the perfect comfort meal after a particularly stressful day.
